In the Castello di Rivoli, Combal Zero is the kingdom of chef-star Davide Scabin (two Michelin stars). His cuisine is experimental, calibrated and focused on all details with close-to-manic attention. The dishes which have made it famous include the “cyber-egg”, egg yoke and caviar embedded in a sort of “mini air chamber”, that you should slice with a scalpel to eat. The setting is designer’s minimalist, in tune with the nearby Museo di Arte Contemporanea.
